Set in the heart of Milford, Derbyshire, the mill is in an ideal location to access a large portion of the community. Redesigned to aquaponically grow coffee beans, the mill reignites the industrial process in the community, allowing a connective educational space. Once used, the coffee is reused as paint allowing a creative upcycling of the waste grounds. After, the diluted waste is anaerobically digested, the compost substrate reused putting the nutrients back in the plants to complete the cycle. In the hope to raise awareness about food waste and not to take our supermarket lifestyle for granted customers are able to take an active part in the bean to cup process by picking their own beans ready to be dried, roasted and ground to their preference. This way they are educated about the process and sustainable agriculture.
